Message of Hope - End of an Era!




It's the end of an era - last week MJ completed his final CPA exam - YEAH!!!!!!!
 
We're both so excited, for you see this will be the first time since we got married (6.5 years) that MJ will not have to study. He studied for years working full-time and completing his Bachelor of Accounting through Open Uni and now the last 3 years has been working full-time and completing his CPA, he does still have another year of CPA but it's a mentoring part now which is through work. 
 
I've been so proud of MJ's commitment and dedication to his studying for all these years and now we can look forward to a new era of no study, no exams, no late nights, weekends back together and a new hope of better things ahead.

Recipe - Strawberry Jam

#81 - Try Jam Making

I've always wanted to have a go at jam making, so when Coles had an awesome special on strawberries the other week I knew my time had come.

So today we will be making strawberry jam.

First up we need:

- 1.5 kg of strawberries (6 x 250g punnets)
- 1/2 cup of lemon juice
- 1.25 kg sugar, warmed
- 1/2 cup of water
- 2 small plates placed in the freezer
- Clean jars


Now wash your strawberries with the stems still on


Next hull the strawberries, never hull and then wash as the strawberries will absorb water and the taste will be affected. 


Now we need to warm the sugar, to do this use a large baking tray and spread the sugar out in an even layer and warm in a slow oven (150 degrees Celsius) for about 10-15 minutes. 


Place the strawberries in a large deep pan with the lemon juice, warmed sugar and water. Now warm gently without boiling, be careful while stirring that you don't break up the berries too much. 

Increase the heat and again without boiling stir for around 10 minutes or until all the sugar has dissolved. 


Now increase the heat and this time bring the mixture to the boil for 20 minutes, stirring often. Make sure you skim any scum off the surface. 


After 20 minutes you can start testing for a setting point but it may take up to around 40 minutes. Make sure the jam isn't catching on the base of the pan and burning. 

To test for setting point remove one of the small plates from the freezer and place around a teaspoon of the jam onto the cold plate. Gently push your finger through the jam, if the jam wrinkles it's ready, if not continue cooking for a little longer and test again.


Once ready remove jam from the heat and spoon immediately into clean, warm jars and seal. Make sure you turn the jars upside down for about 2 minutes and then turn back up the right way and leave to cool (this just helps move the air around inside the jars). Be sure to label and date your jars so you know what jam is inside and the date you made it. Store in a cool, dark place for up to 6-12 months. Once opened place in the fridge for up to 6 weeks.

Messages of Hope - New Life

It was a dark and stormy night, heavy rain and lightening everywhere - sounds like the beginning of a horror movie doesn't it but in fact it beginning of the birth my newest nephew. 
 
Last Tuesday night as a shocker - weather wise - and my sister-in-law goes into labour right in the middle of it all.  At 3:30am Wednesday morning while most people are generally asleep my little nephew came into this world and changed it forever. He wasn't due for another 4 weeks but he had other plans and surprised the lot of us - especially his parents. 
 
It's always exciting when a new baby is born as it's a new life into this world, a new person that has the ability to change history, to make this world a better place, to achieve, to be, to live. It's amazing all the opportunities that will come into his little life. 
 
I'm going to enjoy watching him grow and develop and become an amazing young man, but for now join me in oohing and aahing over his cute little face.

Recipe - Raspberry, Cranberry & Hibiscus Sorbet

When the weather warms up I love to eat ice-cream, gelato or sorbet as it's oh so yummy and refreshing on a hot day.

I got this idea originally from a Donna Hay magazine but I changed up the flavours to what I had on hand.

Raspberry, Cranberry & Hibiscus Sorbet 

500g frozen raspberries
125ml boiling water
310ml cranberry & hibiscus cordial (I bought mine at the local organic shop)


Place the raspberries, water and cordial in a food processor and process until combined. 


Pour into a metal tin (I used a loaf tin) lined with cling wrap (as it makes it easier to get out later) and freeze for 3-4 hours or until set. 



Cut the sorbet into squares place into a food processor and process until smooth. 


Return the sorbet to the freezer for 1 hour or until ready to stand - enjoy

Messages of Hope - Loving me at my worst.


There was no Messages of Hope last week cause I was really sick with a tummy bug but instead of writing about a hope story I got to experience one in it's place.

At the moment my amazing husband MJ is currently studying for his final CPA exam that's only a week away so it's crunch time with study. While he is studying full bore I am making sure meals are on time, bathrooms are clean, floors vacuumed etc but last weekend I came down with a stomach bug (well I think it was from that 'Australian Style' feta I bought).

I haven't had a stomach bug in over 5 years and MJ is usually not very good with vomit (sorry) but even while he was studying he made sure he was there to pull my hair back, help clean me up, keep my glass full of water and tried to make me feel comfortable.

It showed me that even though he was in the middle of something extremely important (as this is a massive and hard exam coming up) that he will still be there for me when I need him most, I'm still at the top of his list.

Thank you MJ for loving me at my worst, including vomit - ha ha!!!!

Pinterest Friday - The Cake Edition

Yeah it's Friday again so it's time for another weekend, and it looks like it's going to be a sunny one here in Sydney.

It's one of my older brothers (I've got 3) 34th birthday next week and I'm in charge of making the cake. All he has asked for is a basic butter cake - well he's going to get his butter cake but it won't be basic (come back soon and find out what I actually do with it - evil laugh).

So in the spirit of his birthday I thought this weeks Pinterest Friday will be a special cake edition. So get a cup of tea ready and enjoy some afternoon tea on me.

#49 - Finish Nigella Cookbook Collection

As part of my 101 list I wanted to collect all of Nigella's cookbooks. I just really love her style of cooking, there is not such thing as low fat but most of her dishes are darn good, taste fantastic and very easy to swing together.

I've got till 29th of March next year to get more items off my list. So with the deadline creeping closer and closer I need to get a move on to tick a few more items off my list.
